This is a staple in my house – I use it for a spread on sandwiches, as a base for a quick mac n’ ‘cheese’, instead of tomato sauce on a pizza….. can’t live without it! Make it your own by adding different ingredients and flavors that you like!
- 1.5 cups garbanzo beans (1 can no salt rinsed and drained)
- 4-5 artichoke hearts (packed in water from the can)*
- 2 Tbs tahini
- 1 garlic clove
- juice from 1 large lemon (or more to taste and desired consistency)
- ¼ tsp fresh black pepper
Place all ingredients in a blender and blend until smooth. If it’s too thick, add some water and blend.
*or use 1 roasted red pepper packed in brine instead of the artichokes and blend to make roasted red pepper hummus.
